Who would have known seaweed could come in so handy!

Ok all my glamorously healthy friends, you are in for a treat!! If you are at all like me and have been on every diet craze out there from low fat to low carb, to no carb all protein, to the master cleanse to the cabbage soup diet to liquids only, fiber cleanses, colon cleanses, the Zone, Atkins, the Fat Flush, Jenny Craig, the grapefruit diet, the banana diet...yikes. I struggled to lose "that last 5 - 10 lbs." for years!!!!!!!!!!! This is why I understand how hard it is to one, not only stick to these crazy diets but if they even work, then to maintain the weight loss forever. My success was a big fat zero. A fun night out, a little too much wine (which I was rarely allowed in the first place!) , a late night snack followed by a day of cheating...there goes a month of discipline!! Extreme dieting is not healthy and is very taxing on your body and in the long term doing much more damage than good. It took me a long time to understand that a slower, healthier more consistent loss is better. Easier to do and easier to maintain...this is not a diet. This is a LIFESTYLE transition. Doesn't that sound nice?

This is how I help my clients - a slow transition into new healthy habits. CROWDING OUT the bad with yummy, nutrient enriched happy food!! Food that makes you slim down, digest quickly, and feel energized! Your hair, skin and nails become strong, smooth and beautiful! It is so easy once you get the hang of it...and it's addictive!!! It's so inspiring and surprising when your tastes change and you start craving healthy food instead of bad. So...back to my treat! I am going to share with you a new recipe that I recently discovered and I LOVEEEEEEEEEEEEE (Especially since I am a sushi roll fanatic!)! I have made it 3 times in the last couple days only because it is so delicious, light and tasty! Not to mention quick and easy!!! Here goes;

The Fabulous Mermaid Roll

Step One.

Chop up or process the following;

1/2 small white onion

3 celery stalks

a small handful of parsley

Step Two.

Cut open a small avocado, removing the pit and slice into lengthwise strips.
Chop up a small Tomato

Step Three

Lay a nori wrapper out (this is the seaweed paper used by sushi chefs - available pretty much everywhere. This is going to become a staple in your pantry so buy a bunch!)

Place the avocado strips down the center of the Nori wrapper about an inch from the edge closest to you. Next spoon some of the celery mixture on top of the avocado, add some chopped tomato and finish with some fresh sprouts (and whatever other leafy veggie you like...romaine, Kale, spinach)

Drizzle some FRESH lemon juice on the nori to soften it up - especially along the edge closest to your body.

Roll the Nori up sushi style tucking one edge in to make holding it easy.

Voila! Your Mermaid Roll!!

Eat this as is or dip in a little bit of natural soy sauce. I recommend Nama Shoyu unpasteurized Soy sauce.

Welcome to the delight of a purely vegetarian meal! Discovering Nori wrappers was huge for me because I used to make so many things from flour tortillas back in the day. CROWD OUT the flour tortillas with Nori wrappers for a wiser healthier more glamorously friendly choice!
